Chocolate Cupcakes with Homemade Peanut Butter Buttercream Frosting

I am a huge fan of chocolate and peanut butter as I am sure many of you are as well♥  So I had wanted to try out something a little exciting in cupcake form.  I used a favorite chocolate cake mix of mine and made homemade peanut butter buttercream frosting. I used my Wilton Jumbo Cupcake Pan and the cupcakes turned out absolutely perfect!

To create the peanut butter buttercream frosting, you will need:

♥ Peanut Butter – 1 cup
♥ Vanilla extract- 1 teaspoon
♥ Milk – 1/2 cup
♥ Butter – 5 tablespoons
♥ Confectioners’ Sugar – 4 cups

Mix peanut butter and butter until fluffy.  Add vanilla and mix.  Add sugar, one cup at a time.  Icing should be dry if mixed properly.  Add milk until fluffy.

Remember that buttercream hardens quickly at room temperature, so make sure to store it in the fridge when not being used.

I absolutely love how the cupcakes turned out.  The Wilton Cupcake Pan was great.  The cupcakes were huge, so more like mini-cakes.  I did a quick piping of the icing onto the cupcake (after it was completely cooled of course) and sprinkled Reese’s Peanut Butter Baking Chips, added a mini Reese’s Peanut Butter Cup, piped some icing on that with a baking chip and done♥  A real easy cupcake to make and definitely a crowd pleaser♥
