
I recently tried Pink Almond Cake and immediately fell in love with it. I have always been a fan of using almond extract when I bake and it is one of my absolute favorite smells (so yummy). So it was only natural for me to make my very own Pink Almond Cake with Almond Buttercream Frosting and so glad I did!
I made the recipe from scratch and it turned out beautifully. Luckily, I imagine most of you will have the necessary ingredients in your pantry already, so I doubt any extra shopping will be necessary. For the cake, you will need:
♥ White Flour – 2 Cups
♥ Milk – 1 and 1/4 cups
♥ Baking Powder – 2 teaspoons
♥ Salt – 1/2 teaspoon
♥ Shortening – 1/2 cup
♥ Vanilla – 1 teaspoon
♥ Eggs – 2
♥ Sugar – 1 and 1/2 cups
♥ Almond Extract – 2 teaspoons
♥ Pink Food Coloring
1. Preheat your oven to 350°F and well-grease your cake pan of choice.
2. Mix the eggs, milk, sugar, vanilla, almond extract and shortening. In another bowl, mix together the dry ingredients (flour, salt and baking powder).
3. Add the dry ingredients to the wet mixture, add pink food coloring and pour into prepared cake pan. Bake for 40 minutes.
4. Once out of the oven, make sure to cool your cake completely before frosting.
Now, for the Almond Buttercream Frosting, you will need:
♥ Shortening – 1/4 cup
♥ Butter – 1/2 cup {softened}
♥ Confectioners Sugar – 4 cups
♥ Almond Extract – 1 teaspoon
♥ Milk – 4 to 5 tablespoons (depends on how firm you want your frosting)
1. With an electric mixer, cream together the shortening and butter.
2. Add almond extract, milk and confectioners sugar. Blend together until fluffy.
3. Spread onto completely cooled cake.
