Trying out new recipes in the kitchen is always a great way to add something new to your cooking routine. For me, I usually only make sweet potato creations during the holidays. However, considering that sweet potatoes are a healthy alternative to some of my families favourite food staples, I just had to make an effort. This meant finding a recipe that would be quick, easy and appealing. Surprisingly, it wasn’t hard at all. I found a fabulous Baked Sweet Potatoes recipe to try in the LiveBetter Magazine and changed it up a bit to fit my family’s tastes!
Baked Sweet Potatoes
You will need:
- 2-4 large sweet potatoes
- 1 cup cheese of choice
- 1/3 cup plain Greek yogurt
- 1/4 cup bacon
- 1/4 tsp garlic salt
- 1/4 cup chopped red pepper
Wash the sweet potatoes and microwave on a plate for 8 minutes.
In the meantime, mix the remaining ingredients together in a bowl.
Cut an X-shape on the top of each sweet potato. Grip the bottom side of the sweet potato and push up until the flesh starts to pop out through the X-shape. Using a fork, fluff the flesh. Form a well in the flesh and top with yogurt/cheese mixture.
